- Fresh Arugula
- Shaved Parmesan
- Crispy Prosciutto (finely sliced, crisped in a frying pan on low heat- remove from heat before it browns- will crumble after cool- I buy it at Aldi)
- Excellent Balsamic (or reduced to nearly a glaze if lesser grade)
- Extra Virgin First Cold Pressed Olive Oil
- fresh, ripe tomatoes
- bleu cheese, or feta
Ok, this little number, although we tasted many variations on this central theme while in Italy, was tasted at and recreated because of the scrumptious qualities of the Bohemian Salad, served by The Bohemian, at the intersection of Main and Stone in Greenville, SC. The people are lovely, the food, never short of remarkably delectable- fresh, local, creative. They even put a big bowl of water on the patio for four-legged guests!
I’ve made various adaptations depending on what I have on hand, but it’s a simple salad with an amazing taste!
